Spice Rubbed Pork Loin

Todays dinner is spice rubbed pork loin. I usually make this in the oven but I'm attempting to make it in the small crock pot. I did brown it on the stove top first tho. This makes an awesome grilled cuban too. (recipe will be at a later date) all measurements are approx. 3tbsp olive oil 1/4 cup packed brown sugar 1/2 tsp chile powder 1/4 tsp ground cinnamon 1/2 tsp ground cumin 1/2 tsp garlic powder Boneless pork loin (this is recipe for approx 3#, I buy the large pork loin from sams and cut it into 3 to 4 depending on how big it is) In crock pot recipe I put all ingredients in the crock pot (forms kinda a sugery paste) I browned the pork loin in an additional tbsp olive oil on the stove then added to the "paste" rubbed it all over the pork. Closed up and have it on low. Will cook till meat thermometer reads at least 135 (i just set mine on low and cook all day) Then it is done. I have been turning my pork loin thru out the day and the paste has turned into a glaze consistency. ( this is because condensation builds in the crock and will add water to whatever you are cooking).When I do this in the oven I brown on the stove top, add to paste and cover it the same with the paste, I bake it at 425 basting every 20 to 30 min till thermometer reads 135. (about an hour depending on the size of your pork loin) Then let the meat rest on a platter for a short while then slice and serve. In the oven it gets kinda a crispy sugery crust. In the crock it is not getting that but smells amazing and is easier. I will let you know how it tastes later.
